Summary:The shelf life of fresh fruits and vegetables can be extended by a low oxygen and high carbon dioxide environment where respiration and gas exchange are restricted by the package material so that a relatively favorable rnicroatmosphere is maintained for a longer duration. Thus, modeling respiration of fresh fruits and vegetables is very important to designing of a successful modified atmosphere packaging (MAP) system. Experiment methods for determination of respiration rate, mathematical modeling of modified atmosphere packaging, as well as the application of kinetic modeling in quality-keeping of fresh fruits and vegetables are reviewed.
