description Over the last 100 years, the French production of truffle has undergone an unprecedented collapse. In the 70’s, it was hoped that this trend could be reversed through both the improvement of agronomy practices and government subsidies. However, such effort proved to be insufficient and the offer remained higher than the demand. Truffle was a luxury product, and became a threatened heritage. Nowadays, truffle is emblematic of the renewal of territories, both in economic and cultural terms, contributing to the survival of rural identity. However, this heritagisation of truffles seems to be slowing down innovation today: a strong association with some particular territories could harm the adaptability of truffle culture in the face of current global climatic changes.
