Insoluble dietary fiber (IDF) in the fruit shell of C. oleifera has various physiological functions against some diseases, such as diabete, cardiovascular disease, intestine cancer, constipation etc., which give it higher health care value and dual performance in economy and society.In order to turn the waste residue of C. oleifera into wealth and dietary fiber-containing functional food, IDF from the wasted part of the shell was extracted with alkali treatment, and the optimal extraction condition and physicochemical properties were studied.The results showed that: 1) After investigating the single factor influencing the extraction yield, the optimal point for each factor was as follows: 0.35 mol/L for the concentration of sodium hydroxide, 80℃ for extraction temperature, 2 hours for extraction duration and 1∶18 for the ratio of solid to liquid. 2) Through orthogonal experiment, the optimal extraction condition of IDF was as follows: the ratio of solid to liquid of 1∶14, sodium hydroxide of 0.35 mol/L with the reaction at 80℃ for 3 h. …”
