description In the study, fresh unripe maize ear was modeled by a two - layer coaxial infinite cylindrical shell based on different physical properties of kernels and cob. The mathematical model is built and solved by the method of improving the enthalpy manner. The research results show the model can be used for predicting the freezing time of the foodstuffs holding two- layer coaxial infinite cylindrical shell and the maximum relative error is 5.6%, the moving velocity of the phase change boundary in the part of corn cob is obviously slower than that of the corn kernel, and the freezing time at different velocity of the air flow becomes very different.
