Summary:The Québec wine industry has been growing steadfastly for about fifteen years now, whereas climate conditions and a certain ignorance of the product would never have let anyone think that possible. In fact, beyond the specific techniques implied to cope with Québec’s winters, the geography of the vineyards may help understand the development of these new gastronomic habits among Quebecers; it also underlines a specific aspect of the relationship between the urban concentrations of Montréal and Québec City and the rural areas around them.
