Summary:This document provides an overview of the Jerusalem artichoke (Helianthus tuberosus L.), a tuberous rooted perennial better suited to northern U.S. regions than Florida. Historically grown by American Indians, it is also known as "sunchoke." The plant grows up to 10 feet tall, producing yellow flowers and knobby tubers. Despite its limited adaptation to Florida, it is cultivated in gardens statewide. The tubers, high in fructose and low in starch, are sought by diabetic patients. Various varieties, including 'French Mammoth White' and 'Smooth Garnet,' are discussed. Original publication date April 1994.
