Description
Summary:Based on the resource population of crossbred between Pietrain and Jinhua pig, the correlation between meat color and other meat quality and carcass traits was studied. The results showed that the correlation coefficients among meat color were high significant (P<0.0001), except that between L-value and a-value, h-value. Furthermore, there were significant correlation between meat color and other meat quality and carcass traits, but most of them were negative. L-value and c-value were negatively (P<0.05) correlated with pH of M. Longissinus (pHml), pH of M. Semimemberanosus (pHms), loin-eye eara and water-holding capacity (WHC), a-value and b-value were both significantly (P<0.05) affected by temperature of MS (tms) and Loin-eye eara. There was a significantly negative correlation between b-value and WHC (P<0.01), but there were significantly positive correlations between h-value and tml, tms(P<0.01).
