Summary:Wheat is the most important cereal plant cultivated on largest surfaces due to its importance as a human food and also for animal feeding. Wheat has a high content of carbohydrates and proteins and a balanced the ratio between these items. Wheat quality is determined by the qualities of gluten such as: viscosity, elasticity, extensibility, resistance to action of the proteolytic ferments in the fermentation process, etc.. Besides production, which is the quantitative indicator, the protein content of the grains is the most important qualitative factor which gives the value of the utilized output. For this reason, this paper aimed to study the behaviour of six Premium Wheat varieties with early precocity in the soil and climate conditions of Calarasi area,Romania, during 2016. The analysis was focused on some qualitative indicators as follows: the content of protein and gluten, the hectolitre weight and the mass of 1,000 grains. All the determinations proved a high quality of grains and also the production performance of all the six Wheat varieties used in this study.
