description The villages where this qualitative anthropological food study was carried out are located in the sylvo-pastoral area of Senegal (Ferlo). This zone of woodland and pastures, in the North of the country, is characterized by a semiarid climate. Since the 1970s, several projects in favour of development and against desertification have been conducted in the Ferlo. The Fulani represent most of the population but some families are also Wolof or Moorish. The objective of this paper is to understand, with an anthropological approach, the tensions and contradictions raised by the introduction of industrial foodstuffs into this Ferlo that was once accustomed to self-sufficiency (millet, milk, Wild food plants).
