Summary:With a view to fostering more sustainable eating habits, food education for youth is one of the main policies planned by the French government. The analysis of the organization of this programme to make children more responsible of their food choices, raises the question of the governance of the many stakeholders mobilised to convey educational messages, at both national and regional level. We show that the State assumes the role of ensuring the validity of the messages delivered to children, while planning an organisation which favours the multiplicity of messengers and topics. In the regions, the coordination of local projects faces institutional barriers, reflecting a limited capacity for governance, despite the use of symbolic and financial instruments. Our study case on school meals underlines the fact that food education is, as it stands, a policy trapped in contradictory injunctions and contributes to the debate on how the State could concretely address the dietary transition.
