Summary:Whatever stories official chroniclers may have spread, we do not believe that the Moriscos ate «vile stuff». We believe that food is a highly suitable subject through which to approach the day-to-day relations between Moriscos and Christians, which were far more cordial than institutional relations. We draw on local sources, contemporary chronicles, and above all Inquisition records, to try and illustrate the features of that day-to-day coexistence within the Duchy of Gandía, where, exceptionally enough, the Muslim vassals of the Borjas were not a minority.
