| description | At present, the phenomenon of insufficient ethyl caproate and high ethyl lactate or ethyl acetate is common in strong-flavor (Nongxiangxing) Baijiu, which seriously affect the quality of Baijiu. In this study, five macroporous adsorption resins (polar DA-201, medium polar DM-301, weak polar AB-8, nonpolar D-101 and nonpolar D4006) and three alcohol activated carbon with the same iodine value and specific surface area (0.5-1 mm particles 1#, 1-2 mm particles 2# and 4-8 mm flaky particles 3#) were compared with the adsorption of alcohols and esters in Baijiu at different time (24 h, 48 h, 72 h). The results showed that the two kinds of materials showed adsorption capacity for ethyl caproate, ethyl butyrate, acetal and ethyl acetate in Baijiu. The content of alcohols on resins changed little after adsorption, and the content of alcohol adsorbed by activated carbon increased slightly. Among the five macroporous adsorption resins, the overall adsorption capacity of weak polar resin AB-8 was stronger, however, the adsorption value of polar resin DA-201 was higher. At 72 h, the adsorption capacity of polar resin DA-201 on ethyl caproate (adsorption rate 24.34%, adsorption capacity 3.33 mg/g) was about 50% that of weak polar resin AB-8, and the adsorption capacity of the two resin on ethyl acetate was equivalent (adsorption rate 36.39%, adsorption capacity 13.60 mg/g). Among the three kinds of alcohol activated carbons, the overall adsorption effect of flake particles was the optimal, which was enhanced with the extension of adsorption time. At 72 h, the adsorption rate and adsorption capacity of flaky particles 3# on ethyl caproate were 16.60% and 170.10 mg/g, and the adsorption rate and adsorption capacity on ethyl acetate were 36.65% and 1 022.88 mg/g, which were better than those of macroporous adsorption resins, indicating that the directional preparation of activated carbon was an effective way to transform alcohols and esters in abnormal indexes of Baijiu into normal indexes. |
