Description
Summary:Chitinases play an important role in biological decomposition of chitin. A large number of chitinases have been isolated from microorganisms. Although every member of the enzymes is different from each other, they have some common structures, such as signal peptides, catalytic domains and chitin-binding domains. In this review, the structural characteristics of chitinase, the expression and control action mechanism as well as the prospect of utilizations of the enzymes in the future are summararized.
