Anthocyanins are flavonoids that have good antioxidant and antibacterial properties due to. Special chemical properties make it possible to change its color according to changes in environmental pH. The use of anthocyanin intelligent packaging film can not only effectively extend the shelf life of food and monitor the freshness of food, but anthocyanin is also a functional additive that can improve the physical and functional characteristics of the packaging film. In this paper, the anthocyanin intelligent packaging film is reviewed. First, the chemical properties of anthocyanins are discussed to explain the principle of color change, then the source differences of anthocyanin, extraction methods, and the selection of film forming matrix of anthocyanin intelligent packaging film are discussed, and the construction of anthocyanin intelligent packaging film is sorted out. Finally, the application of anthocyanin intelligent packaging film in food preservation is summarized. To provide a theoretical basis for future research and new product development of anthocyanins intelligent packaging film.
