Summary:The study area, which is cradle of chicory cultivation in France, is located on the southeastern edge of the urban area of Lille, between the city and the Belgian border. This zone is part of the supply of “countryside” provided by the Urban District to the city population. A typology of farms, based on production systems and on the level of the opening of farms to the desires of urban society, allows us to distinguish four groups. Half of the farms are committed to a logic of “opening towards the city”.
