description This article looks at recent developments on dairy cattle farms in French mid-mountain regions with high forage potential, in the context of the end of the milk quota system. It is based on a comparative study of the dynamics in four small regions (Chataigneraie cantalienne, Livradois-Forez, Monts du Lyonnais and Vercors), combining in-depth fieldwork and statistical analysis. We show that the end of the milk quota system has had a significant impact on the increase in milk production per farm. On the most advantaged dairy farms (in terms of location, surface area and capital), physical labour productivity has continued to increase (higher milk yields, robotisation of milking). For farms with more grassland, which are often smaller, conversion to organic farming or “hay milk” and the search for more economical functioning have been an effective way of maintain, much more so than the PDOs present in these regions, whose specifications are not very demanding and offer only a meagre price differential.
