Fatty acid profiles of intramuscular and subcutaneous fat tissues of Huzhou sheep

| Summary: | Thirty male (ten each, at age of 5 months, 10 months and 18 months) and ten female (4 years old) Huzhou sheep were used as experiment animals. Meat (triceps brachii) and fat (caudal back) were taken to study the fatty acid (FA) profiles of intramuscular fat (IM) and subcutaneous fat (SC) with gas chromatograph (GC). Thirty-two kinds of fatty acids were identified in both IM and SC. The major fatty acids were oleic (C18∶1), palmitic (C16∶0) and stearic (C18∶0), with oleic being the most. These three FAs occupied 74.20%-79.74% of the total FA. Short, medium and long chain FAs were presented at 0.2%-0.5%, about 4% and 95% in both fat tissues. There was a trend of C18s increased and C16s decreased with age. The percentage of saturated fatty acid (SFA), monounsaturated fatty acid (MUFA) and polyunsaturated fatty acid (PUFA) were 44.17%-45.14%, 45.72%-46.87% and 8.17%-10.14% in IM, respectively. The SC contained more SFA and less MUFA, PUFA than IM. The content of SFA increased with age. The PUFA increased with age from 5 months to 10 months, decreased from 10 months to 4 years. The ratios of P/S were 0.18-0.23 and 0.13-0.20 in IM and SC, both increased with age from 5 months to 10 months, decreased from 10 months to 4 years, just the same with PUFA. The effects of age on the contents of total n3 and n6 FA were also same with PUFA. The ratios of n6/n3 were 0.64-0.82 in IM and 0.94-1.46 in SC, increased with age except the first two age groups. |
