Summary:Ginger (Zingiber officinale) is an important spice crop known for its nutritional and medicinal values. The quality of ginger must be improved in order to meet international market standards. An experiment was conducted in the Salyan district of Nepal to identify genotypes with superior physico-chemical properties that help to increase export potential and improve the economic condition of farmers. The experiment included 11 different ginger genotypes in a completely randomized design. Parameters such as bulk density, meat-to-peel ratio, moisture content, dry recovery percentage, powder recovery percentage, oleoresin content, essential oil content, and crude fiber content were observed. The data was tabulated in MS Excel and analyzed using R-Studio. Mean comparison among significant variables was done using Duncan’s Multiple Range Test (DMRT) at a 5% level of significance. Results showed that oleoresin content, essential oil content, and crude fiber content ranged from 3.77% (ZI-0515) to 6.73% (ZI-1302), 1.39% (ZI-1630) to 2.40% (ZI-1302), and 3.29% (ZI-0515) to 6.43% (ZI-1302), respectively. Dry recovery percentage and powder recovery percentage ranged from 19.75% (ZI-1630) to 34.03% (ZI-1025) and 18.55% (ZI-1630) to 32.67% (ZI-1025), respectively. Genotype ZI-1630 had the highest moisture content (90.05%), while ZI-1025 had the lowest (75.62%). Bulk density ranged from 1.016 g/ml (ZI-1302) to 1.114 g/ml (ZI-1903), and meat-to-peel ratio ranged from 7.77 (ZI-1616) to 23.08 (ZI-1010). Overall, genotype ZI-1302 was found to have higher oleoresin content, essential oil content, crude fiber content, as well as good dry recovery and powder recovery.
