In this paper, the formation, toxicity mechanism, detection methods, analysis and research status of ethyl carbamate in Baijiu in recent years, limit standards and control measures at home and abroad were systematically reviewed, aiming to provide theoretical basis for improving the safety of Baijiu industry in China.
