| description | As the most popular meat resource in China, pork deserves great attention of quality supervision. The quality of pork plays an important role in supporting the qualified daily life, nutrition ingestion and safety of dietary. The nondestructive detection technology is a dominant means for pork quality determination and supervision system. This paper reviewed the published work concerning nondestructive detection for pork quality in foreign laboratories during last decade. The ultrasonic detection, imaging and spectral analysis, electronic noses and nuclear magnetic resonance (NMR) technology were involved basing on the acoustic, optical or other physical-chemical characteristics of pork, respectively. The results demonstrate that the applications of technologies mentioned above are feasible and reliable in measuring the quality of live pigs, pork carcass, and pork adipose tissue. Additionally, it illustrates that the online detection and the real-time determination in complex environments of slaughtering and processing are trends of pork quality detection, as well as the detection of quality in v ivo and the integration of several nondestructive detection technologies. |
